Made in small quantities by one of the region’s most respected artisan producers, it balances Mediterranean richness with freshness and finesse. Esprit Malin has become a quiet insider tip among sommeliers and collectors looking for authentic, terroir‑driven wines from the Languedoc.

Tasting Notes
In the glass, Esprit Malin typically shows a deep, vibrant ruby colour with purple reflections at the rim, hinting at both concentration and energy. The nose is expressive and layered: ripe black cherries, wild strawberries and plum compote are woven together with notes of garrigue herbs (thyme, rosemary, lavender), cracked black pepper, liquorice and a subtle smoky, mineral edge. On the palate, the wine is medium to full‑bodied, with silky yet structured tannins and a lively line of acidity that keeps the southern warmth in check. Grenache brings juicy red fruit and generosity, Mourvèdre adds depth, spice and a savoury, almost gamey nuance, while Syrah contributes dark fruit, pepper and tension. The finish is long and persistent, marked by dried herbs, cocoa and a touch of graphite. Enjoyable in its youth for its vibrancy and aromatic intensity, Esprit Malin also has the structure to evolve gracefully for 5–8 years from vintage, gaining complexity and softer, more integrated tannins with time.

Production
Esprit Malin is sourced from organically farmed vineyards in the Languedoc, where the Mediterranean climate meets cooling winds and stony, limestone‑rich soils. These well‑drained, low‑yielding sites naturally limit vigour and concentrate flavour in the Grenache, Mourvèdre and Syrah grapes. Harvesting is typically done by hand, allowing rigorous selection of perfectly ripe, healthy bunches in the vineyard. In the cellar, Alain Chabanon favours gentle, low‑intervention winemaking: the grapes are destemmed or partially destemmed depending on the vintage, followed by spontaneous fermentation with native yeasts. Macerations are carefully managed to extract fine tannins and aromatic complexity rather than sheer power. The wine is then aged in a mix of concrete, large casks or used barrels (depending on the cuvée and year), preserving freshness and terroir expression while adding subtle texture before bottling with minimal fining and filtration.

Food & Serving
Esprit Malin is a versatile table companion for flavourful Mediterranean and rustic dishes. It pairs beautifully with grilled lamb chops with rosemary, slow‑cooked beef or lamb stews, duck with olives, herb‑roasted chicken, and hearty pasta or gnocchi with tomato, tapenade or ragù sauces. It also works well with charcuterie, aged hard cheeses (such as Comté or Manchego) and dishes featuring roasted vegetables, aubergine, or mushrooms. Serve at 16–18°C; a light chill in warmer weather can enhance its freshness. Young bottles benefit from 30–45 minutes in a carafe to open up the aromatics, while more evolved bottles can simply be poured and enjoyed, allowing the wine to unfold gradually in the glass.
