Domaine Alain Chabanon Campredon Bio 2020 is a vibrant, organically farmed Languedoc red that showcases the region’s three flagship grapes: Syrah, Mourvèdre and Grenache. Named after Alain Chabanon’s mother (Campredon is her maiden name), this cuvée is crafted as the domaine’s red “calling card” – approachable, authentic and unmistakably Mediterranean. Its combination of purity, freshness and restraint sets it apart from many richer, more confected southern reds.

Tasting Notes
In the glass, Campredon Bio 2020 shows a deep, clear ruby color with violet reflections, hinting at both concentration and freshness. The nose opens with dark red fruits – think black cherry, wild strawberry and ripe raspberry – layered with notes of garrigue herbs, subtle florals and a touch of spice. A faint mineral edge and a whisper of licorice add complexity without overwhelming the fruit. On the palate, the wine is surprisingly taut and refreshing for a southern blend, with juicy but precise fruit that avoids any jammy or overripe character. The texture is medium-bodied and supple, guided by a fine, linear acidity and gentle, rounded tannins. Herbal and floral accents echo the nose, while a discreet chalky-mineral note gives the finish a cool, lifted feel. Enjoyable now for its energy and purity, it has the structure to evolve gracefully over the next 4–6 years, gaining further aromatic nuance and softness.

Production
The grapes for Campredon Bio 2020 come from dry, steep parcels in Languedoc, rooted in poor clay-limestone soils that naturally limit yields and concentrate flavor. Domaine Alain Chabanon farms organically, working the vines with respect for biodiversity and avoiding synthetic treatments. The three cépages – Grenache Noir, Mourvèdre and Syrah/Shiraz – are harvested by hand at optimal ripeness, then undergo spontaneous fermentation with native yeasts. Maceration typically lasts four to five weeks to gently extract color, aroma and fine tannin. The wine is then aged for around ten months in stainless steel, preserving its fresh, unadorned fruit profile and the subtle expression of its terroir rather than overlaying it with oak.

Food & Serving
Campredon Bio 2020 is a versatile food wine that shines with Mediterranean-inspired dishes: grilled lamb chops with rosemary, roast chicken with herbs, ratatouille, or charcuterie and aged hard cheeses. It also works beautifully with lighter fare such as grilled vegetables, lentil stews or pasta with tomato-based sauces. Serve at 15–17°C to highlight its freshness and aromatic complexity. A brief decant of 20–30 minutes can help the wine open up, particularly in its youth, revealing more of the floral and herbal nuances.

Campredon, bearing his mother’s maiden name, embodies the domaine’s philosophy: an honest, precise expression of southern French terroir that is both accessible and quietly sophisticated.
