Tasting Notes
In the glass, it opens with an elegant, luminous character and a fine, persistent mousse. The nose is beautifully nuanced, with candied lemon, bergamot, and white peach, followed by deeper notes of cocoa and toasted coffee that add remarkable complexity.
On the palate, the wine is both powerful and refined, with vivid freshness balanced by a silky texture. Fine bitterness, subtle umami, and a lightly saline, almost iodized finish create impressive length and precision. While already expressive, this P2 has the structure and complexity to develop further over time.
Production
Crafted from Chardonnay and Pinot Noir from Champagne, the 2008 vintage benefits from the region’s cool climate and the exceptional balance of that year. P2 refers to an extended lees-aging release, where the wine is given significantly more time in the cellar before disgorgement, allowing it to gain depth, tension, and aromatic complexity while preserving the vintage’s natural freshness and structure.
Food & Serving
An excellent match for refined dishes such as oysters, scallops, caviar, langoustine, or delicate poultry with cream-based sauces. It also pairs beautifully with aged Parmesan or other savory umami-rich dishes. Serve well chilled at around 8–10°C, and decanting is generally not necessary unless you want to allow the wine to open gradually in the glass.
