In the glass, Divella Spumante Dady Dosaggio Zero presents a pale straw to light gold hue with a fine, persistent mousse and delicate bead. The nose is lifted and pure, offering notes of green apple, lemon zest, fresh pear, and white flowers, layered with hints of brioche, crushed chalk, and a subtle saline edge.
On the palate, this is taut, razor-clean, and linear, with crisp citrus and orchard fruits supported by a pronounced mineral backbone. The absence of dosage allows the wine’s tension and precision to shine, while the time on lees adds gentle creaminess and complexity—think lightly toasted bread, almond, and a whisper of pastry. Production
Sourced from hillside vineyards in Lombardy, Divella’s Chardonnay grows on predominantly calcareous and limestone-rich soils that naturally lend the wine its chalky, mineral profile. Vines are farmed with great care, often along organic or low-intervention principles, with hand-harvesting to ensure only perfectly ripe, healthy grapes reach the cellar. The base wine is fermented with native yeasts, and secondary fermentation takes place in bottle using the traditional (méthode classique) method. Extended aging on the lees builds texture, complexity, and fine bubbles, and the wine is disgorged without dosage, resulting in a Dosaggio Zero style that faithfully transmits the character of the fruit and terroir.
Food & Serving
This ultra-dry Chardonnay-based spumante is a natural partner for raw and simply prepared seafood—think oysters, crudo, scallop carpaccio, and shrimp tartare—as well as sushi, sashimi, and briny shellfish. It also pairs beautifully with fresh goat cheese, lightly fried appetizers, tempura, and delicate vegetable dishes such as asparagus or artichokes with lemon. Serve well-chilled at 6–8°C (43–46°F) in a white wine or tulip-shaped sparkling glass to highlight its aromatics and texture. Decanting is not necessary, but opening the bottle 10–15 minutes before serving and allowing it to come very slightly off fridge temperature will help the wine open up.
