Tasting Notes
In the glass, Delamotte Rosé NV typically shows a delicate salmon to pale copper hue, with a fine, persistent mousse that speaks to careful aging on the lees. The nose is expressive and inviting, opening with aromas of red apples, crisp stone fruits, cherries, and wild strawberries, layered with notes of fresh brioche and pastry cream.
On the palate, this Rosé is medium to full-bodied, with a fleshy, enveloping texture that feels both supple and structured. Juicy red berry and cherry flavours are lifted by a bright, chalky acidity and a subtle citrus edge, while hints of almond, pastry and a touch of spice carry through to a long, mouthwatering finish. Production
Delamotte Rosé NV is produced in the Côte des Blancs and surrounding areas of Champagne, where cool climate and chalky soils contribute to the wine’s tension, minerality, and finesse. The blend is classically anchored in Pinot Noir, often sourced from renowned crus for rosé, with a complement of Chardonnay to bring lift, elegance, and linear acidity. Grapes are harvested by hand to ensure careful selection, and the rosé colour is typically obtained by blending a small portion of still red Pinot Noir into the base wine or through a brief maceration, depending on the vintage conditions. After a gentle pressing and temperature-controlled fermentation in stainless steel, the wine undergoes secondary fermentation in bottle and is aged on its lees for several years, allowing the development of those signature notes of brioche and fine texture before disgorgement and dosage.
Food & Serving
This is a rosé Champagne made for the table: its depth and savoury edge make it an excellent partner for dishes beyond simple aperitifs. Pair it with charcuterie, duck rillettes, tuna tartare, grilled salmon, or roast poultry, as well as delicately spiced Asian dishes and creamy soft cheeses. It also works beautifully with tomato-based seafood pastas or a classic niçoise salad. Serve well-chilled but not icy, ideally at 8–10°C (46–50°F), to allow the fruit and pastry notes to express themselves. A brief 10–15 minutes in a chilled decanter or simply resting in the glass will help the aromas open and the texture relax.
