De Saint Gall Le Selection is an elegant, refreshing Champagne that showcases the house’s signature style of finesse, purity, and bright fruit character. Built from Chardonnay, Pinot Noir, and Meunier, it brings together precision, freshness, and a refined mousse in a way that makes it instantly appealing. The cuvée reflects the long tradition of Champagne blending, drawing on fruit from some of the region’s most respected vineyards.

Tasting Notes
In the glass, Le Selection shows a lovely lemon-tinged colour with a stream of fine, persistent bubbles. The nose is inviting and expressive, with notes of white flowers, yellow apple, pear, citrus, and a hint of brioche. On the palate, it is crisp, focused, and beautifully balanced, with exact fruit-driven acidity and a chalky mineral edge. Yellow and green orchard fruits are layered with fresh lilies, newly baked bread, and a subtle flinty character. This is a Champagne built on clarity and finesse, and while it is ready to enjoy now, it will hold its freshness well over the near term.

Production
Le Selection is made from 55% Chardonnay, 25% Pinot Noir, and 20% Meunier, including 57% reserve wines, sourced from Côte des Blancs, Montagne de Reims, and Vallée de la Marne. The blend benefits from the chalk-driven terroirs of Champagne, which contribute both minerality and tension, while the reserve wines help add depth and consistency. After disgorgement, the wine receives 10 g/L of dosage, placing it in the brut style and preserving its dry, refined profile.

Food & Serving
This Champagne is an excellent aperitif and also works beautifully with elegant fish dishes such as sole, halibut, scallops, or sushi. Serve well chilled at 8–10°C to preserve its freshness and detail. Decanting is not recommended; simply open and enjoy at the table.
