Production
The Bastardo vines for this wine are over 40 years old, rooted deep in the Douro’s classic schist (schiefer) soils at higher altitudes, where cooler nights help preserve acidity and aromatic precision. Harvest is done entirely by hand, with a strict selection in the vineyard to ensure only perfectly ripe, healthy bunches make it to the winery. The grapes are traditionally foot-trodden with their stems in granite lagares, allowing for gentle extraction and a whole-cluster character that enhances perfume and structure. Fermentation occurs spontaneously with native yeasts, and the wine is then matured in neutral vessels—primarily stainless steel—so that no new oak intrudes on the grape’s delicate profile. The result is a transparent, terroir-driven expression of Bastardo, unadorned and precise.

This is a wonderfully versatile food wine that shines with dishes where freshness and subtlety are key. Pair it with charcuterie, lightly cured meats, grilled chicken, rabbit, pork tenderloin, duck breast, or earthy vegetable dishes like mushroom risotto, beetroot salads and roasted root vegetables.
