Tasting Notes
In the glass, Heideboden Bio 2022 typically shows a deep ruby to garnet hue with a lively, youthful rim. The nose layers dark plums and spiced damsons with red berry jelly, dates and hints of wild cherries, underpinned by subtle notes reminiscent of beeswax, polished wood and a touch of vanilla from careful élevage. Mineral nuances—think wet stone, slate and dried bark—add a cool, earthy complexity that keeps the aromatic profile lifted and intriguing.

Production
The grapes for Heideboden Bio 2022 come from the Heideboden area on the eastern side of Lake Neusiedl, a broad plain with gravelly, sandy and loamy soils that provide excellent drainage and encourage deep root systems. The moderating influence of the lake, combined with warm Pannonian currents, promotes full ripeness while preserving acidity. Claus Preisinger farms his vineyards organically and biodynamically, working with low yields and careful, mostly manual harvesting to ensure healthy, perfectly ripe fruit. In the cellar, he favors a gentle, minimalist approach: spontaneous fermentation with indigenous yeasts, moderate extraction to preserve finesse, and élevage in neutral or lightly used barrels and large casks, allowing the blend of Blaufränkisch, Merlot and Zweigelt to express purity of fruit, fine spice and the distinct mineral edge of Burgenland’s terroir.
Food & Serving
Heideboden Bio 2022 is a highly food-friendly red that pairs beautifully with roast poultry, pork dishes, charcuterie, grilled sausages, and rustic classics such as goulash or braised beef with root vegetables. It also works well with mushroom-based dishes, hearty vegetarian stews and medium-aged semi-hard cheeses. Serve at 16–18 °C to highlight its freshness and aromatic detail. A brief decant of 30–45 minutes can help open up the fruit and soften the tannins, but the wine is equally enjoyable poured straight from the bottle for a more vibrant, youthful impression.
