Tasting Notes
In the glass, the wine is an intense, dark ruby with a youthful rim. Its nose gradually reveals layers of blackcurrant, blackberry and blue fruit, followed by graphite, dried herbs and an elegant floral note of violet. On the palate, it is full-bodied and tightly composed, with dense fruit supported by mature yet pronounced tannins. Well-integrated French oak contributes subtle impressions of cedar, tobacco and dark chocolate without overwhelming the wine’s purity. Compared with the more reserved 2013 vintage, 2012 is more open, generous and immediately approachable, with a rounded texture and considerable charm. Its depth, balance and firm structure give it excellent ageing potential; it is already enjoyable after a short period of aeration and should continue to develop beautifully for another 25–30 years, depending on storage conditions.

Production
The Cabernet Sauvignon comes from Meleagris Gallopavo Vineyard, where old vines grow in well-drained, stone-rich soils. This rocky terroir contributes notable tension, energy and mineral character to the wine. Specific details regarding harvesting and vinification are not provided, but the Cabernet was matured with French oak, which is seamlessly integrated into the finished wine and complements its dark fruit, structure and savoury complexity.

Food & Serving
Serve at approximately 16–18°C. A short decant of 30–60 minutes will help open the wine’s layered aromas and soften its youthful tannins, while older bottles should be decanted carefully to separate any sediment. Its concentration and structure make it an excellent match for grilled or roasted beef, prime rib, venison, lamb, or richly flavoured dishes featuring mushrooms, herbs and black pepper.
