Cesari Corvina Veronese Jema is a polished and expressive red from Veneto, crafted from Corvina and shaped by the Valpolicella tradition. Made by the historic Gerardo Cesari estate, founded in 1936, it brings together careful vineyard work, partial appassimento-style drying, and long oak aging for added depth and elegance.

Tasting Notes
In the glass, it shows a bright purple-red hue that hints at its lively fruit character. The nose opens with red berries and macerated cherry, layered with subtle toasted notes, cocoa, and coffee. On the palate, it is soft, full-bodied, and beautifully balanced, with a harmonious texture and impressive length. The finish is persistent and refined, while the structure suggests it can develop well with a few more years in bottle.

Production
The grapes come from the Valpolicella area in Veneto, where Cesari works with the local terroir to bring out Corvina’s natural fragrance and structure. To enhance concentration, the fruit undergoes additional cluster thinning during veraison and is left to ripen until the end of October before being carefully harvested and laid in crates to dry for around 20 days. Fermentation with skin contact lasts about 20 days, followed by 18 months in small French oak barrels, blending in cask, and a further 6 months of maturation.

This wine pairs well with roasted red meats, game, braised dishes, and rich pasta recipes, especially those with mushroom or meat sauces. Serve at 16–18°C, and consider decanting for about 30 minutes to let the aromas open fully.
