Tasting Notes
The wine is deep ruby in colour. Its refined bouquet opens with blackcurrant, dark cherry and violet, followed by nuanced notes of cedar, graphite, tobacco and dried herbs. On the palate, it is concentrated yet remarkably energetic, with vibrant acidity, polished tannins and a mineral, stony character that carries through to the long finish. At around 13% alcohol, the wine has an unusual lightness and balance for Cabernet Sauvignon without sacrificing depth. It can be enjoyed young for its clarity and tension, while careful cellaring should allow the fruit, earthy nuances and savoury complexity to develop further over the coming years.

Production
The grapes come from Peter Martin Ray Vineyard, a high-altitude site above the Pacific Ocean with steep slopes and rocky, volcanic soils. The old, free-standing vines produce naturally small berries with intense aromatics, firm structure and pronounced acidity. Cultivated according to organic principles, the wine is fermented with native yeast in concrete to preserve purity of fruit and texture, then matured for approximately three years in French oak barrels, including a portion of new oak. The careful use of oak adds complexity while allowing the vineyard’s cool-climate, mineral character to remain at the forefront.

Food & Serving
A natural partner for grilled or roasted lamb, prime beef, venison and other game, this Cabernet Sauvignon also works beautifully with mature hard cheeses. Serve at 16–18°C. Decant for around one to two hours when drinking it young to open up its aromatics and soften its structure; older bottles should be decanted more gently, primarily to remove any sediment.
