Ceritas Paratus Cabernet Sauvignon 2022

Ceritas Paratus Cabernet Sauvignon 2022 is a distinctive, terroir-driven expression of Napa Valley Cabernet Sauvignon, made entirely from grapes grown at the high-elevation Paratus Vineyard on Mount Veeder. Its volcanic soils, cool mountain setting and restrained cellar approach result in a wine of depth and precision, balancing concentrated dark fruit with freshness, mineral character and firm structure.

Tasting Notes
Deep ruby-red in appearance, the wine opens with an intense yet refined bouquet of blackcurrant and black cherry, complemented by pencil lead, cedar, cool earth and a subtle mineral note. On the palate, it is concentrated and firmly structured, with pronounced tannins, vibrant acidity and clearly defined dark fruit. The finish is long and precise, with the mineral character of Mount Veeder emerging distinctly. This is a Cabernet Sauvignon with considerable aging potential. While it can be enjoyed now with decanting, its tannins, acidity and concentration should allow it to develop greater complexity, elegance and finesse for a decade or more when stored under ideal conditions.

Production
The wine is made from 100% Cabernet Sauvignon grown at Paratus Vineyard on Mount Veeder in Napa Valley, approximately 1,540 feet above sea level. The vines are cultivated according to organic principles in volcanic soils, and the grapes are handled with minimal intervention to preserve a clear sense of place. Fermentation takes place with indigenous yeasts in concrete vessels, using gentle extraction to retain the freshness and finesse of the fruit. The wine then matures for approximately 36 months in 500-litre French oak barrels, around 40% of which are new, adding texture and depth without overshadowing the vineyard character. Alcohol is approximately 13.0%.

Food & Serving
Serve at approximately 16–18°C. Its firm structure and concentrated fruit make it an excellent partner for grilled or braised beef, venison and other game dishes, as well as mature hard cheeses. Decant for one to two hours before serving to soften the tannins and allow the wine’s dark fruit, cedar and mineral nuances to unfold. Older bottles may benefit from careful decanting to remove any sediment.
