Ceritas Mariana's Cabernet Sauvignon 2022

Ceritas Mariana’s Cabernet Sauvignon 2022 is a refined, cool-climate expression of Cabernet Sauvignon from the high-elevation Santa Cruz Mountains. Made exclusively from organically farmed fruit at Mariana’s Vineyard, it combines the grape’s natural depth and structure with the freshness and precision associated with this distinctive Californian region.

Tasting Notes
The wine has an intense ruby-red colour. Its aromatic profile opens with ripe blackcurrant, blackberry and dark cherry, followed by nuanced notes of graphite, cedar and dried herbs. On the palate, it is concentrated yet poised, with firm, mature tannins, precise acidity and a mineral character that gives the wine both energy and depth. The finish is long, balanced and persistent, with fruit and savoury nuances lingering together. This is a Cabernet Sauvignon with considerable ageing potential. With time in bottle, the powerful fruit should become increasingly integrated with the oak and develop further tertiary complexity, including more pronounced earthy, herbal and cedar-like notes.

Production
Mariana’s Vineyard is situated at a high elevation in the Santa Cruz Mountains, where sandy and sandstone-rich soils contribute to the wine’s combination of intensity, freshness and mineral definition. The Cabernet Sauvignon is cultivated according to organic principles and harvested with a focus on preserving the natural character of the fruit. Fermentation takes place with native yeast in concrete vessels, helping to retain freshness and pure fruit expression, before the wine matures for approximately three years in French oak barrels, including a proportion of new oak. At around 13% alcohol, it maintains an elegant and harmonious style.

Food & Serving
Serve at approximately 16–18°C. Decanting for one to two hours is recommended when enjoying the wine young, as this allows its concentrated fruit, tannins and mineral notes to open up. It is a natural partner for grilled or braised beef, lamb, venison and other game dishes, as well as roasted meats, mushroom-based preparations and mature hard cheeses.
