Ceritas ‘Carex’ Chardonnay 2023 is an elegant California white wine that places purity, freshness and finesse at the centre of the Chardonnay experience. Crafted by Phoebe and John with a restrained, terroir-conscious approach, it offers a refined alternative to richer, more overtly oaked styles.

Tasting Notes
The wine opens with a bright, pale appearance. Its delicate nose evokes a flowering meadow, with graceful aromas of white peach, ripe pear and a subtle hint of vanilla. On the palate, refreshing citrus notes meet understated nutty and spicy nuances, while a gently buttery texture adds depth without compromising the wine’s poise. The finish is balanced, polished and quietly persistent. Enjoy it in its youth for its freshness and aromatic precision, or allow it to develop further in bottle, where its texture and more nuanced fruit character should gain additional complexity.

Food & Serving
Serve lightly chilled at approximately 10–12°C. Its balance of citrus freshness and supple texture makes it a natural partner for grilled or poached fish, shellfish, roast chicken, creamy pasta and salads featuring pear or toasted nuts. Decanting is not essential, although a brief period of aeration in the glass can help reveal the wine’s floral and subtly spiced character.
