Cavallotto, Pinner, 2022

Cavallotto Pinner 2022 is a distinctive white wine made entirely from Pinot Noir, vinified without skin contact to preserve its pale, elegant style. From one of Piemonte’s most respected names, it offers a rare take on the grape, combining freshness, finesse, and a subtle nod to red-fruited character.

Tasting Notes
Pale and bright in the glass, this wine is defined by a fresh, lifted aromatic profile. Expect citrus, green pear, and a delicate hint of red fruit on the nose, with the palate leaning toward crisp green fruit, fine detail, and a soft, refined texture. There is a quiet complexity here, with small strawberry nuances appearing beneath the more pronounced green-fruited notes. The lees ageing adds extra depth and mouthfeel without overt oak influence, and the wine should be enjoyed for its freshness, though it also has enough balance to develop gracefully over the short to medium term.

Production
The Pinot Noir grapes are sourced from well-regarded vineyards in the Langhe district of Piemonte. Following a Champagne-like approach, the fruit is pressed immediately after harvest, with the skins removed at once to prevent colour extraction, and the must is handled as a white wine from that point onward. The wine is then aged on its lees to build complexity, but sees no oak, keeping the profile pure and precise.

Food & Serving
An excellent match for fish dishes, especially those with delicate sauces, as well as dry cheeses. Serve chilled, ideally around 8–10°C, and decanting is not necessary; simply open and pour to enjoy its freshness and clarity.
