Cavallotto Barolo Riserva Vignolo is a classic, organic Barolo from one of Castiglione Falletto’s most respected family estates. Made from 100% Nebbiolo and aged in large Slavonian oak, it combines traditional craftsmanship with remarkable depth, structure, and finesse. It also carries the legacy of a family that has tended the Bricco Boschis vineyards since 1928.

Tasting Notes
In the glass, it shows a bright, intense garnet color that immediately hints at its seriousness and age-worthy character. The bouquet is aristocratic and layered, with menthol and mineral notes woven through ripe berry fruit, roses, violets, earthy undertones, roots, and an elegant thread of oriental spice. The palate is harmonious and flavorful, with a beautiful structure and noble tannins that give the wine both presence and refinement. A juicy, pulpy fruit character keeps everything alive and balanced, suggesting excellent aging potential and the ability to develop even more complexity over time.

Production
This Barolo Riserva comes from Cavallotto’s organically farmed vineyards in Castiglione Falletto, in the heart of Piedmont’s Barolo zone. The grapes are hand-harvested, fully destemmed, and fermented with native yeasts, followed by semi-submerged cap maceration for 18 to 30 days. The wine is then matured for 48 to 60 months in Slavonian oak casks, allowing Nebbiolo’s natural structure and aromatics to unfold with purity and depth.

Food & Serving
A wine like this deserves classic, flavorful dishes such as braised beef, roast lamb, wild boar, truffle risotto, or aged hard cheeses like Parmigiano Reggiano and Pecorino. Serve at around 16–18°C and, if possible, decant for 1–2 hours to let the aromas fully open and the tannins soften.
