Cavallotto’s Barolo Riserva Vigna San Giuseppe DBMG 2012 is a classic, cellar-worthy expression from one of Barolo’s most respected family estates. Sourced from a tiny Nebbiolo parcel in Castiglione Falletto, it combines remarkable intensity with poise, structure, and the kind of detail that has made great Barolo famous for generations.

Tasting Notes
In the glass, it shows the deep, youthful ruby-garnet hue typical of serious Nebbiolo, with a refined translucency at the rim. The bouquet is layered and traditional, opening with dried herbs, wild strawberry, and a subtle древесно/spicy note that adds depth and complexity. On the palate, the wine is powerful yet impeccably balanced, delivering pure, elegant red fruit wrapped in savory spice and a firm Barolo structure. The long skin contact contributes concentration and grip, while the extended oak aging lends harmony rather than overt wood. This is a wine with excellent aging potential and should continue to evolve beautifully over many years.

Production
The Vigna San Giuseppe is a very small parcel in Castiglione Falletto planted to Nebbiolo, where the soils and exposure help produce a Barolo of precision, depth, and aromatic complexity. Cavallotto practices extended maceration on the skins to build intensity and structure, followed by 4–5 years of maturation in large oak casks, preserving the wine’s traditional character and site expression.

Food & Serving
Serve at 16–18°C and consider decanting for 2–4 hours if opening young, as this will help the wine show its full aromatic range and soften the tannins. It pairs especially well with rich meat dishes such as braised beef, game, roasted lamb, and mature hard cheeses.
