Tasting Notes
In the glass, the 2022 Catena Cabernet Sauvignon shows a deep, ruby-red color with a youthful purple rim. The nose opens with classic cassis and ripe blackcurrant, followed by black cherry, plum, and hints of graphite, cedar, dried herbs, and subtle vanilla spice from oak aging. Gentle notes of tobacco leaf and cocoa add complexity as it sits in the glass.
On the palate, this is medium to full-bodied, with juicy black fruit at the core—think blackcurrant, blackberry, and dark plum—wrapped in fine, chalky tannins. Fresh acidity, lifted by the high-altitude vineyards, keeps the wine lively and well-balanced, while layers of graphite, bay leaf, and baking spices linger on a long, persistent finish. Enjoyable now with a brief aeration, it has the structure to evolve gracefully for 5–8 years, gaining additional savory and tertiary nuances over time.
Production
The grapes for Catena Cabernet Sauvignon 2022 are sourced from select high-altitude vineyards across Mendoza, particularly in the Uco Valley and Luján de Cuyo, where rocky, well-drained alluvial soils and significant day–night temperature shifts help develop concentration, aromatics, and natural acidity. Fruit is hand-harvested in small boxes to preserve berry integrity and sorted carefully on arrival at the winery. The varieties—Cabernet Sauvignon as the backbone, with Cabernet Franc and Petit Verdot to add aromatic lift, structure, and color—are fermented in stainless steel tanks with controlled temperatures to retain freshness and purity of fruit. The wine is then aged in a combination of new and used French oak barrels, typically for around a year, to integrate tannins and add subtle notes of spice and toast without overpowering the varietal character.
Food & Serving
This Cabernet is a natural partner for richly flavored dishes—think grilled ribeye, Argentine asado, lamb chops with rosemary, or slow-braised short ribs. It also works beautifully with hard cheeses such as aged Cheddar, Manchego, or Parmigiano-Reggiano, as well as mushroom-based dishes and hearty stews. Serve at 16–18°C (60–65°F) for optimal expression of fruit and structure. Decanting for 30–45 minutes before serving will help soften the tannins and allow the more subtle herbal and spicy notes to emerge.
