For collectors and enthusiasts alike, it offers a classic yet approachable snapshot of Serralunga’s character in a warm, generous vintage.

Tasting Notes
In the glass, the wine shows a deep garnet core with brick-red hues at the rim, already hinting at its evolution and complexity. The nose is intricate and expressive, with layers of ripe red cherry, dried rose petals, tar, and sweet spices, followed by notes of leather, underbrush, licorice, and a touch of tobacco typical of Barolo from Serralunga. On the palate, Cascina Adelaide Barolo Baudana 2017 is firm yet finely tuned, with Nebbiolo’s hallmark tannins wrapped around concentrated flavors of sour cherry, wild strawberry, blood orange, and dried herbs. There is a distinct mineral backbone, evoking iron and stone, balanced by savory notes of truffle and a gentle balsamic lift on the finish. The acidity is vibrant and keeps the wine precise and energetic despite the warmth of the vintage. Drinking well now with proper aeration, it has the structure to evolve gracefully for 10–15 years or more, gaining further complexity and tertiary nuances with time in bottle.

Production
Sourced from the Baudana cru in Serralunga d’Alba, this Barolo benefits from the area’s limestone- and clay-rich soils and steep, well-exposed slopes, which naturally produce wines of great structure and depth. The Nebbiolo grapes are typically hand-harvested at optimal ripeness to ensure careful selection in the vineyard, preserving both fruit purity and tannin quality. In the cellar, the wine is traditionally vinified with extended maceration to extract color, aroma, and fine tannins, followed by a lengthy maturation in large oak casks (and/or a combination of large barrels and smaller French oak) to refine the structure without overwhelming the wine’s distinctive terroir expression. The result is a Barolo that faithfully translates Baudana’s power and minerality into the glass.

Food & Serving
This Barolo is a superb partner for rich, savory dishes such as braised beef, osso buco, roast lamb, or game birds, as well as classic Piedmontese specialties like brasato al Barolo, tajarin with meat ragù, or truffle-infused dishes. Mature cheeses, particularly aged Parmigiano Reggiano or hard alpine cheeses, also make a fitting match. Serve at 16–18°C (about 60–64°F) to highlight its aromatic complexity and balance. Decanting for 1–2 hours is recommended in its youth to soften the tannins and allow the bouquet to fully open; older bottles can be decanted more gently, mainly to remove sediment.
