Carsten Saalwächter Weißer Burgunder Hoher Fels 2021 is a finely etched, mineral-driven Pinot Blanc from one of Rheinhessen’s most exciting young producers. Sourced from a striking, limestone-dominated site above an old stone quarry, it shows an unusually cool, stony profile for the region, emphasizing freshness and precision over opulence. Tasting Notes
In the glass, the 2021 Hoher Fels is pale straw with greenish reflections, signaling its youth and vibrancy. The nose immediately shows the hallmark “Saalwächter touch”: fruit is understated and finely tuned, with hints of lemon zest and crisp Granny Smith apple wrapped in layers of crushed seashells, wet stone, sea spray and a flinty, smoky nuance that speaks clearly of pure limestone.
On the palate, the wine is taut, focused and saline, with a precise, linear structure. Bright acidity carries delicate citrus and green orchard fruit, quickly giving way to a mouthwatering mineral core—think chalk dust, oyster shell and a subtle herbal edge. The texture is silky yet firm, with impressive grip and length, finishing bone-dry and slightly salty. This 2021 has excellent aging potential; while already compelling in its youth, it should gain further complexity and harmony over 5–8 years, developing more nuttiness, creaminess and tertiary minerality with time in bottle.
Production
Hoher Fels comes from a high, slightly north-facing parcel in Rheinhessen, positioned above an old stone quarry where the vines root deeply into pure limestone rock. This cooler exposition and stark, calcareous terroir shape the wine’s tension, salinity and restrained fruit character. Grapes are typically hand-harvested at optimal ripeness to preserve acidity and phenolic balance, then carefully sorted to ensure only pristine fruit reaches the cellar. In Saalwächter’s historic Ingelheim cellar, the must is usually fermented with indigenous yeasts, allowing the site to express itself unmasked by heavy intervention. Aging takes place in a thoughtfully chosen selection of barrels—only the best and most characterful lots make it into the final Hoher Fels cuvée—often on fine lees to build texture and depth without sacrificing purity or that striking, flinty edge.
Food & Serving
This focused, mineral Weißburgunder is a natural partner for refined, seafood-driven cuisine: think oysters, scallops, ceviche, sushi and sashimi, or simply grilled white fish with herbs and lemon. It also works beautifully with light poultry dishes, veal in delicate cream sauces, fresh goat cheese, young alpine cheeses and vegetable-based dishes featuring fennel, asparagus or artichoke. Serve at 9–11°C (48–52°F) to highlight its precision and freshness. A short decant of 20–30 minutes, or simply pouring into larger-bowled white wine glasses, helps the wine open up aromatically and reveal more of its subtle citrus, sea-shell and flinty complexity.
