Carsten Saalwächter Spätburgunder Assmannshausen La Première 2021 is the elegant “first step” into his Rheingau-style Pinots, crafted from vineyards on the so‑called “wrong” side of the Rhine. While the estate itself lies in Ingelheim (Rheinhessen), this cuvée comes from steep parcels at the foot of the famed Assmannshausen Höllenberg in the Rheingau, where grey slate reigns. Raised with the same meticulous approach as his Ingelheim wines, La Première offers a strikingly different, darker and more smoky expression of Spätburgunder that clearly speaks of its origin.

Tasting Notes
In the glass, the 2021 La Première shows a translucent yet intense ruby color with garnet highlights, typical of finely structured Spätburgunder but with a deeper hue than Saalwächter’s limestone-based wines. It immediately suggests ripeness and tension, rather than sheer power. On the nose, the wine opens with dark cassis, wild forest berries and ripe damson plum, layered with a distinct smoky flint character. There are hints of crushed slate, black tea, and a delicate note of smoked bacon, adding an alluring, savory dimension. On the palate, the wine is juicy yet finely etched, with a filigree structure supported by vibrant acidity and ultra-fine, chalky tannins. The dark berry fruit is lifted by subtle spice and a salty, mineral drive from the grey slate soils, making the wine feel both precise and mouthwatering. While already approachable in its youth for its purity and freshness, this 2021 has the structure and energy to evolve beautifully over the next 6–8 years, gaining more complexity and tertiary nuances with time in bottle.

Production
The grapes for La Première come from steep, slate-rich vineyards at the base of the legendary Assmannshäuser Höllenberg, just where the Rhine bends back towards the north and moderates the local climate. Here, cool nights, excellent drainage and the heat‑retaining grey slate combine to produce Spätburgunder of depth and tension, in marked contrast to the limestone sites around Ingelheim. The fruit is typically hand-harvested at optimal ripeness to preserve freshness and detail, followed by careful sorting in the cellar. Vinification follows the same artisanal principles as Saalwächter’s Ingelheim Pinots: gentle extraction, significant use of whole berries or partial whole clusters depending on vintage, and spontaneous fermentation with native yeasts. Maturation takes place in carefully selected barrels, often with a restrained use of new oak, to frame the wine’s smoky, mineral intensity without overpowering its delicate fruit and terroir expression.

Food & Serving
This Spätburgunder is a versatile partner at the table and shines with dishes that echo its savory, smoky notes. Think roast duck or guinea fowl, pork loin with herb crust, game birds, or veal with wild mushrooms. It also pairs beautifully with charcuterie, lightly smoked meats, and earthy vegetarian dishes such as lentils, beetroot, or roasted root vegetables, as well as semi-soft cheeses. Serve at 14–16 °C to highlight its freshness and aromatic complexity. A short decant of 30–45 minutes is recommended in its youth to allow the smoky flint and dark fruit to fully unfurl, while more mature bottles can simply be opened in advance and enjoyed as they evolve in the glass.
