Tasting Notes
In the glass, Canon 2020 shows a deep, shimmering ruby-purple hue that hints at both concentration and freshness. The nose unfolds slowly, revealing pure aromas of ripe cherries and wild raspberries, layered with exotic spice, iris, and a subtle chalky mineral note. With air, discreet hints of graphite and fine cocoa add further complexity.
On the palate, this is medium to full-bodied, with striking depth and intensity carried by vibrant acidity. The core of red and dark berry fruit is suave and focused, wrapped in beautifully polished, powder-fine tannins that reflect its limestone origins. The wine is precise rather than opulent, finishing with a long, mouthwatering, saline-tinged aftertaste that leaves the palate refreshed. Production
Château Canon lies on the famed limestone plateau of Saint-Émilion, where thin clay topsoils over pure limestone bedrock give the wines their hallmark freshness, fine-grained tannins, and mineral drive. The vineyards, planted predominantly to Merlot with a significant share of Cabernet Franc, are carefully managed and harvested by hand, allowing for precise selection parcel by parcel. In 2020, meticulous sorting in the vineyard and at the winery ensured only perfectly ripe, healthy fruit made it into the final blend. Vinification took place in temperature-controlled vats, with gentle extraction to preserve finesse and aromatic purity, followed by aging in French oak barrels (a significant proportion new) to refine the structure and add subtle complexity without obscuring the clarity of the fruit or the character of the terroir.
Food & Serving
Canon 2020 is a natural partner for refined dishes that match its elegance and structure: think roast lamb with herbs, dry-aged ribeye, veal chop with morel sauce, or pigeon and game birds. It also pairs beautifully with mushroom dishes, truffle risotto, or hard cheeses such as Comté and aged Gruyère. Serve at 16–18°C (60–64°F) to highlight its aromatic detail and freshness. If opening in its youth, decant for 1–2 hours to allow the wine to open up; with more bottle age, a gentle pour to avoid sediment and 30 minutes in a carafe will usually suffice.
