Caldaro Sauvignon Stern 2025

Caldaro Sauvignon Stern 2025 is a dry, still Sauvignon Blanc that captures the variety’s aromatic character in the hills of South Tyrol. Made by Kellerei Kaltern, a winery founded in 1900, it combines fragrant fruit with a rounded texture and a lingering finish.

Tasting Notes
Bright straw yellow with greenish highlights, it opens with an expressive bouquet of elderflower, blackcurrant and hints of exotic fruit. The palate is full and juicy, with fresh fruit flavours, a refined mineral note and a long, persistent finish. Enjoy it while its fruit and aromatic freshness are lively; specific cellaring potential is not provided.

Production
The Sauvignon Blanc vines grow on southeast-facing hillsides around Caldaro, at 450–500 metres above sea level. Cool nights help preserve acidity and aromatic definition, while limestone- and porphyry-rich soils contribute a mineral character. The grapes undergo cold maceration before gentle pressing and clarification, followed by slow, temperature-controlled fermentation in stainless steel and large casks. The wine then rests on fine lees for five months, adding texture and roundness.

Food & Serving
Serve lightly chilled, around 8–10°C, with fish, asparagus or mild cheeses. Its aromatic freshness also suits simply prepared seafood and vegetable dishes. Decanting is generally unnecessary; open shortly before serving.

Kellerei Kaltern, also known as Cantina Kaltern, was founded in 1900 and is based in Caldaro, in the heart of South Tyrol. The winery’s Stern label celebrates Sauvignon Blanc, a variety introduced to the region in the late 19th century and well suited to the local growing conditions.
