Ca' dei Frati Cuvée dei Frati Extra Brut Rosé Metodo Classico is a refined sparkling rosé that captures the elegance and energy of Lake Garda in Lombardy. Crafted from the same native grape blend as the estate’s beloved Rosa dei Frati, this wine transforms a beloved still rosé concept into a sophisticated, bottle‑fermented cuvée. With around 24 months of aging on the lees, it offers a level of depth and complexity rarely seen in Italian rosé sparklers.

Tasting Notes
In the glass, this Extra Brut Rosé shows a delicate, bright salmon‑pink hue with fine, persistent bubbles forming a creamy, continuous mousse. On the nose, expect a vibrant bouquet of wild strawberries, red currants and pomegranate, layered with hints of blood orange zest, rose petals, fresh herbs and a subtle mineral edge. The palate is dry and focused, with the Extra Brut dosage emphasizing precision and freshness over sweetness. Lively acidity frames flavors of crunchy red berries, sour cherry, citrus peel and a touch of stone fruit, supported by a gentle, savory note from the Barbera and Groppello. The texture is supple yet taut, with the 24 months on the lees contributing a discreet brioche and almond nuance without overwhelming the wine’s bright fruit. The finish is clean, saline and pleasantly lingering. Enjoy it now for its vivid freshness, but it can develop additional aromatic complexity and a more biscuity character over the next 3–5 years.

Production
The grapes for Cuvée dei Frati Extra Brut Rosé come from vineyards in Lombardy near Lake Garda, where the mild climate, constant breezes and mineral‑rich, morainic soils help preserve acidity and aromatic intensity. Barbera, Groppello Gentile, Marzemino and Sangiovese are harvested at optimal ripeness to balance structure and freshness—typically picked by hand to allow careful selection of bunches. After a gentle pressing to obtain the delicate rosé hue, the base wines are fermented at controlled temperatures in stainless steel to preserve purity of fruit. The cuvée then undergoes a second fermentation in bottle, Metodo Classico, and matures for around 24 months on the lees, gaining complexity, fine bubbles and a refined, creamy texture before disgorgement and release with an Extra Brut dosage.

Food & Serving
This structured yet elegant rosé sparkler is a versatile partner at the table. It pairs beautifully with antipasti, charcuterie, sushi, crudo, grilled prawns, shellfish, and delicate fish dishes, as well as light pasta and risotto with seafood or spring vegetables. It can also complement poultry, veal carpaccio and soft to semi‑hard cheeses. Serve well‑chilled at around 6–8°C (43–46°F). A brief 10–15 minutes in the glass or an open bottle is enough to let the aromas unfurl; decanting is not necessary, but avoid serving it overly cold so the fine fruit and subtle lees notes can fully express themselves.
