Sourced from 35 selected crus across Champagne, this non-vintage cuvée is the house’s flagship wine, designed to remain faithful to its style year after year. Tasting Notes
In the glass, this Champagne shows a luminous, pale gold color with fine, persistent bubbles forming a delicate mousse. The nose is precise and layered, revealing notes of citrus zest, green apple, white flowers, and chalky minerality, evolving into hints of brioche, hazelnut, and subtle spice from extended aging on lees.
On the palate, Première Cuvée Extra Brut is dry, taut, and beautifully balanced. Pinot Noir and Meunier bring red fruit tones, structure, and breadth, while Chardonnay lifts the wine with freshness and finesse, adding lemon cream and stone-fruit nuances. The low dosage keeps the wine linear and vibrant, emphasizing purity of fruit and a long, saline, mouthwatering finish. In magnum, the wine develops more slowly, gaining additional complexity over time; well-stored bottles can comfortably evolve for 8–12 years, often longer, gaining deeper toasty, nutty, and honeyed nuances while retaining a core of freshness.
Production
Première Cuvée is a mosaic of terroirs, drawn from 35 carefully chosen crus across the Champagne region, including chalk-rich slopes and cooler sites that preserve tension and elegance. Grapes—Pinot Noir, Chardonnay, and Pinot Meunier—are harvested by hand to ensure pristine fruit selection, parcel by parcel. Vinification is carried out in a combination of stainless steel and, for selected lots, neutral oak, allowing each terroir to express itself clearly. A significant proportion of reserve wines from multiple vintages is blended in to ensure consistency of style and added depth. After secondary fermentation in bottle, the wine is aged extensively on the lees, far beyond the appellation minimum, before being disgorged with an extra brut dosage, highlighting precision, minerality, and house character.
Food & Serving
This Extra Brut magnum is an exceptionally versatile food Champagne. It pairs beautifully with oysters, caviar, and fresh shellfish, as well as crudo, sashimi, and delicate white fish dishes. It also shines alongside poultry in light cream sauces, tarte fine with scallops, or simple dishes like parmesan shavings, jamón ibérico, and lightly aged goat cheeses. Serve well chilled at about 8–10°C (46–50°F). A magnum benefits from a few minutes in the glass rather than extensive decanting; simply open 15–20 minutes before serving to let the aromas unfurl, especially if the bottle has some age.
