Tasting Notes
In the glass, the 2019 St. Eden shows a deep, saturated ruby-purple hue, almost opaque at the core. The nose is generous and layered, with ripe black cherries, blackberry compote, and cassis rising first, followed by cedar, graphite, cocoa, and a hint of warm baking spice and dried violets. On the palate, it is full-bodied, silky, and seamless, with a luxurious texture that marries richness with finesse. Plush dark fruit—blackberry, black cherry, and plum—is supported by finely knit tannins and a vibrant acidity that keeps everything precise rather than heavy. Notes of mocha, tobacco leaf, pencil shavings, and a subtle ferrous, mineral edge from the iron-rich soils add depth on the long, persistent finish. While already seductive in its youth, this 2019 will reward patience; it deserves a few years in the cellar and has the structure to evolve beautifully for at least two decades.

Production
The St. Eden vineyard lies on the eastern benchlands just north of Oakville Crossroad in Napa Valley, where iron-rich, well-drained gravelly and volcanic soils yield intensely flavored yet refined Cabernet. The site benefits from warm days tempered by cool evening breezes, allowing for slow, even ripening and excellent phenolic development. Grapes are hand-harvested in small lots at optimal maturity, then carefully sorted to ensure only pristine fruit is used. Vinification typically involves small-lot fermentation in temperature-controlled tanks, with gentle extraction to build structure without harshness, followed by élevage in a high proportion of new French oak barrels. Extended barrel aging polishes the tannins and integrates the oak, resulting in the hallmark Bond balance of power, precision, and purity.

Food & Serving
St. Eden 2019 is a natural partner for richly flavored, refined dishes such as dry-aged ribeye, roasted lamb racks with herbs, braised short ribs, or venison with a red wine reduction. It also complements truffle-infused dishes, wild mushroom ragù, and aged hard cheeses like Comté, Parmigiano-Reggiano, or mature cheddar. Serve at 16–18°C (60–64°F) to highlight both freshness and depth. If drinking in its youth, decant for 2–3 hours to allow the aromatics to unfurl and the tannins to soften; with extended bottle age, a gentle 30–60 minute decant is usually sufficient.
