Tasting Notes
In the glass, this Champagne shows a delicate salmon-pink hue with a lively, persistent bead. The nose opens with inviting aromas of raspberry and cherry, layered with subtle citrus and a hint of brioche. On the palate, it is harmonious and fresh, balancing ripe red fruit with bright acidity and a creamy mousse. The finish is elegant and lingering, with enough structure to suggest it will hold its charm well in the near term.

Production
Crafted in Champagne, France, Bollinger Rosé Brut is built from Chardonnay, Pinot Meunier, and a prominent share of Pinot Noir, which is central to the wine’s texture and intensity. A portion of the Pinot Noir is vinified as red wine, giving the Champagne its rosy colour and a refined red-fruit dimension. As with Bollinger’s other wines, the focus is on precision, depth, and maintaining the house style through careful blending and vinification.

Food & Serving
Ideal with salmon, tuna, poultry, charcuterie, or dishes featuring red berries, this Rosé Brut is versatile at the table and particularly strong with elegant appetisers and festive fare. Serve well chilled, around 8–10°C, and decanting is not recommended; simply open and enjoy while the bubbles are lively.

Lilly Bollinger only produces an excellent rosé. A wine that I myself enjoy very much pairs well with summer cuisine, but you should drink champagne year-round, though!
