Tasting Notes
The wine typically shows a golden hue with a fine, persistent mousse. On the palate, it is generous and layered, balancing creamy texture with vibrant acidity and chalk-driven precision. Production
Bollinger sources fruit from carefully selected Premier and Grand Cru vineyards, with a strong focus on Pinot Noir to build structure and richness. Fermentation is traditionally carried out in small oak barrels, which adds texture and complexity while preserving the wine’s sense of place. Best enjoyed with refined dishes such as lobster, scallops, roast poultry, truffle risotto, or aged hard cheeses. Serve chilled at around 8–10°C, and decanting is not usually necessary, though a short rest in the glass can help the wine open up further.
