Tasting Notes
In the glass, Spécial Cuvée shows a brilliant golden hue with a fine, persistent mousse. The nose is elegant and layered, with ripe orchard fruit, baked apple, citrus zest, toasted brioche, and subtle notes of hazelnut and spice. The palate is generous yet precise, with a creamy texture balanced by fresh acidity and a long, mineral-driven finish. A blend built for complexity and harmony, it can be enjoyed now for its vibrancy and nuance, while also showing the depth and structure to remain rewarding over time.

Production
Bollinger’s vineyards are predominantly located in the Montagne de Reims, Aÿ, and the Vallée de la Marne, where chalk, clay, and limestone soils contribute to the wine’s power and finesse. The grapes are harvested by hand, and the wine is vinified with careful parcel selection and a significant proportion of reserve wines, many of which are aged in magnums to preserve freshness and complexity. Part of the blend is fermented in oak barrels, adding subtle richness and texture without overpowering the wine’s balance.

Food & Serving
This Champagne is excellent with oysters, scallops, smoked salmon, roast chicken, and dishes with creamy sauces or truffle. It also pairs beautifully with hard cheeses and refined poultry preparations. Serve well chilled at 8–10°C, and decanting is generally unnecessary, though a brief opening in the glass can help reveal its full aromatic complexity.
