Bollinger Blanc de Noirs PN AYC21 NV

Bollinger PN AYC21 is a refined Blanc de Noirs Champagne made exclusively from Pinot Noir, showcasing the grape’s depth, structure and elegance. The cuvée forms part of Bollinger’s limited PN series, which explores the individual character of Pinot Noir from distinguished Champagne villages; “AYC21” indicates the cuvée’s origin and 2021 base vintage while the wine is released as non-vintage Champagne.

Tasting Notes
Bright golden in colour, with a fine, persistent bead. The nose combines ripe orchard fruit, red berries and citrus with subtle notes of toasted brioche, chalk and spice. On the palate, it is generous and structured, offering flavours of pear, red apple and raspberry alongside fresh acidity and a distinctly mineral finish. Its balance, concentration and Pinot Noir character make it enjoyable now, while careful cellaring for several years should allow greater aromatic complexity and softness to develop.

Production
Produced in Champagne from Pinot Noir, Bollinger PN AYC21 reflects the character of the selected Pinot Noir terroir associated with the Aÿ sector. As with Bollinger’s traditional style, the wine is crafted with an emphasis on texture, precision and depth, using reserve-wine expertise to build complexity in the blend. The second fermentation takes place in bottle according to the traditional Champagne method, followed by extended lees ageing before disgorgement.

Food & Serving
Its combination of richness and freshness makes it an excellent partner for oysters, lobster, scallops and grilled or roasted fish. It also pairs beautifully with roast poultry, veal, mushroom dishes and mature soft cheeses. Serve well chilled at around 8–10°C. Decanting is not essential, but a short period in a wide Champagne glass can help reveal the wine’s layered aromas and generous texture.
