Bodegas F. Schatz Acinipo Bio 2020 is an organic Andalusian red that shines a spotlight on Lemberger/Blaufränkisch in the warm hills around Ronda – an almost unheard‑of combination in Spain. This is a wine for curious drinkers: structured, aromatic and distinctly Mediterranean, yet rooted in a Central European grape variety. Named after the nearby Roman city of Acinipo, it bridges ancient history and modern, experimental winemaking in one expressive bottle.

Tasting Notes
In the glass, Acinipo Bio 2020 shows a deep, vibrant ruby colour with violet reflections, hinting at both concentration and freshness. The nose is immediately inviting: ripe dark cherries and blackberries mingle with blackcurrant, framed by a savoury herbal lift. As it opens, layers of dried bay leaf, sage and thyme emerge, joined by notes of roasted wood, black olives and a touch of spice. On the palate, the wine is medium to full‑bodied with precise, lively acidity that keeps the dark fruit vivid and juicy. Flavours of sour cherry, black berry fruit and cassis are supported by fine, persistent tannins that give structure without harshness. The Mediterranean herbs and subtle oak toast carry through to a long, savoury finish, where dried herbs and a faint smokiness linger. Thanks to Lemberger’s natural spine of acidity and tannin, Acinipo Bio 2020 has very good aging potential; it will develop further complexity over the next 5–8 years, softening its edges while gaining more tertiary, earthy and balsamic nuances.

Production
The grapes for Acinipo Bio 2020 are grown in the high‑altitude vineyards around Ronda in Andalusia, where cooler nights and limestone‑rich soils temper the southern Spanish sun. This combination of warmth, elevation and mineral soils suits Lemberger/Blaufränkisch, allowing for a long, even growing season and full phenolic ripeness without losing freshness. Bodegas F. Schatz farms organically (and practices biodynamic principles), working by hand in the vineyards, with careful, selective harvesting to ensure only perfectly ripe, healthy bunches reach the winery. Vinification is gentle and minimalist: the grapes are destemmed, fermented with native yeasts, and macerated to extract colour, aroma and fine tannins, followed by maturation in carefully chosen barrels to add subtle roasted notes and texture without masking the grape’s character. The result is a wine that clearly reflects both its unusual varietal choice and the distinctive Ronda terroir.

Food & Serving
Acinipo Bio 2020 is a versatile food wine that pairs beautifully with dishes that echo its mix of fruit and herbal savouriness. Think grilled lamb chops with rosemary, Iberian pork, game birds, or slow‑braised beef with thyme and root vegetables. It also works well with tomato‑based stews, roasted vegetables, mushroom dishes, and aged semi‑hard cheeses. Serve at 16–18°C to show both its aromatic lift and textural depth. A short decant of 30–45 minutes is recommended, especially in its youth, to allow the herbal and olive notes to unfold and the tannins to relax.
