Tasting Notes
In the glass, this Champagne shows a luminous, pale gold color with fine, persistent bubbles forming a delicate mousse. On the nose, it opens with citrus zest, green apple and pear, followed by hints of white flowers, chalky minerality, brioche and a subtle nuttiness that reflects time spent on the lees.
The palate is taut and vibrant at first, with a crisp attack of lemon, grapefruit and crunchy orchard fruit, evolving into notes of stone fruit, almond and light pastry. Sourced from estate vineyards in the Champagne region of France, Barbichon’s Réserve 4 Cépage reflects the nuanced terroir of the area, with limestone and chalk-rich soils that naturally favor finesse and minerality. Grapes from the four traditional Champagne varieties are carefully hand-harvested at optimal ripeness to preserve acidity and aromatic purity. In the cellar, the base wines are vinified separately, typically in a mix of stainless steel and, for select parcels, neutral oak to add texture without overpowering the fruit. Following blending of multiple vintages to achieve a consistent house style, the wine undergoes secondary fermentation in bottle and is aged extensively on its lees, building depth, creaminess and complexity. The Extra Brut dosage is kept very low, underscoring the precision of the fruit and the clarity of the terroir.

This Extra Brut Champagne is an excellent match for refined, savory dishes that benefit from freshness and structure. Try it with oysters, scallops, sushi and sashimi, or delicate white fish with citrus or beurre blanc sauces.
