Tasting Notes
In the glass, Chambertin 2021 shows a deep, luminous ruby hue with a youthful, vibrant rim. The nose is layered and complex, opening with sweet red and black cherries, dark berries and ripe plum, interwoven with notes of licorice, exotic spice and a subtle smokiness reminiscent of game or roast duck. Hints of rose petal, earth and fine oak spice emerge with air, underscoring its Grand Cru pedigree. On the palate, the wine is full-bodied yet finely etched, with a silken texture that wraps around a core of concentrated, pure fruit. Flavors of black cherry, wild raspberry and damson are lifted by lively acidity and supported by firmly structured, ultra-fine tannins. Savory undertones of spice, minerality and gentle smokiness build toward a long, broad and expansive finish that unfolds in layers. While already remarkably expressive in its youth, this Chambertin has significant aging potential; over 10–20+ years it will gain even more nuance, secondary complexity and textural harmony.

Production
Sourced from the storied slopes of Chambertin in Gevrey-Chambertin, this Grand Cru sits on a mosaic of limestone and clay soils that naturally limit yields and give the wine its depth, tension and mineral drive. Armand Rousseau farms these old vines with meticulous care, favoring sustainable, low-intervention practices and careful hand-harvesting to ensure only perfectly ripe, healthy grapes reach the cellar. Vinification is traditional and precise: whole or partially destemmed bunches are gently fermented in open vats, with attentive extraction to capture fragrance and finesse rather than brute power. The wine is then aged in fine French oak barrels—only a proportion new—to allow the terroir’s character to shine through, before being bottled with minimal handling.

Food & Serving
This Chambertin Grand Cru deserves equally refined cuisine: think roast duck with cherries, pigeon, venison, or other game birds, as well as slow-braised beef, veal sweetbreads or truffled poultry. It also pairs beautifully with refined mushroom dishes, such as morels or porcini, and aged hard cheeses from cow’s milk. Serve at 15–17°C (around 59–62°F) in large Burgundy stems to showcase its aromatic complexity. Decant gently 1–2 hours before serving in its youth to help the wine open up; older bottles should be handled delicately with a shorter decant or simply poured carefully from the bottle.
