It’s a refined choice for those who appreciate terroir-driven Champagne with energy, depth and a decidedly gastronomic profile.

Tasting Notes
In the glass, Le Monts De la Vallée Extra Brut typically shows a pale, shimmering golden hue with fine, persistent bubbles forming an elegant mousse. On the nose, expect lifted aromas of red apple skin, wild strawberry, citrus zest and white flowers, layered with notes of brioche, chalk and a subtle hint of spice from the Pinot Noir. The palate is taut and focused, with the structure and red-fruited core of Pinot Noir wrapped in vibrant acidity. Flavours of ripe orchard fruits, citrus, crushed raspberry and a light saline edge unfold across the mouth, supported by a delicate biscuit and almond nuance from time on the lees. The extra-brut dosage keeps the wine bone-dry yet not austere, giving it both tension and length. Enjoy it now for its vibrancy, or cellar for a few years to allow additional complexity and creaminess to develop.

Production
Sourced from carefully selected vineyards in the Champagne region of France, Le Monts De la Vallée reflects the chalky and limestone-rich soils that give Champagne its hallmark finesse and minerality. Pinot Noir is harvested by hand to ensure optimal ripeness and careful selection of bunches. Gentle pressing yields the purest juice, which is then fermented in stainless steel or neutral vessels to preserve freshness and varietal character. After the base wines are blended, the Champagne undergoes its second fermentation in bottle and is aged on the lees to build texture and complexity, before being disgorged with an extra-brut dosage to maintain a crisp, terroir-focused style.

Food & Serving
This Extra Brut Champagne pairs beautifully with refined yet flavourful dishes: think oysters, scallop crudo, sashimi, sushi, or simply grilled prawns with lemon and herbs. It also works well with charcuterie, soft-ripened cheeses, roast chicken, and lighter veal or pork dishes where its acidity can cut through richness. Serve well-chilled at around 8–10°C (46–50°F). A brief 10–15 minutes in the glass or in a decanter designed for sparkling wine can help the aromas open up, but extended decanting is not necessary—allow it to evolve gradually as you sip.

A gem among growers' champagnes, Bouvet specializes in different expressions of Pinot Noir (I've also recommended their rosé) – zesty, dry, and appetizing rosé with typically deep Pinot Noir character. Oak barrel aging of the base wines gives that extra complexity, and there is a nicely oxidative touch that complements the herbal profile. More and more people ask for them at restaurants, so it's fun to collect them.
