The 2025 Pinot Noir from Eburon Estate Winery is a rare single-vineyard expression from Haspengouw, one of Belgium’s most promising wine regions. Produced from just 1,150 bottles, it combines the cool-climate freshness of Belgian Pinot Noir with élevage in French oak barriques and a ceramic egg. From vineyards near Tongeren—Belgium’s oldest city—it offers a refined, mineral-driven interpretation of this classic Burgundy grape.

Tasting Notes
Bright and elegant in the glass, this Pinot Noir opens with expressive aromas of fresh red cherry, raspberry and wild strawberry. Subtle floral tones are joined by delicate spice, finely integrated oak and a distinct mineral character derived from the silex-rich soils. The palate is juicy, precise and beautifully balanced, with lively acidity, fine-grained tannins and a silky texture. The combination of barrel and ceramic-egg maturation brings depth without overshadowing the fruit, while the finish is fresh, mineral and notably refined. It is approachable in its youth, yet its structure and freshness should allow it to develop gracefully over the next few years.

Production
The wine comes from 1.5 hectares of vineyards surrounding Eburon Estate Winery in Tongeren, planted on silex soils composed of clay, limestone and silica. The grapes were hand-harvested on 3 October 2025, with additional sorting to ensure exceptional quality. After complete destemming, the must underwent a gentle 72-hour cold maceration, followed by approximately two weeks of temperature-controlled fermentation in stainless steel with careful daily punch-downs. Following pressing and malolactic fermentation, 80% of the wine matured for nine months in new, lightly toasted French barriques from François Frères in Burgundy, while the remaining 20% was aged in a ceramic egg. The components were then blended and bottled unfiltered.

Food & Serving
Serve lightly chilled at 14–16°C to highlight the wine’s fresh fruit and mineral precision. It is a versatile partner for salads, grilled fish, creamy risotto, pasta and poultry, as well as contemporary vegetarian dishes. Its elegant structure also works well with lightly spiced meat dishes. A short decant of 20–30 minutes can help the young wine open, while careful pouring is recommended because it was bottled unfiltered.

Producer
Eburon Estate Winery farms vineyards in and around Tongeren, in the heart of Haspengouw. The estate’s Pinot Noir vines were planted in two stages, with 1,341 vines established in 2015 and a further 900 planted in 2022. This limited single-vineyard release reflects the estate’s focus on detailed vineyard work, careful hand-harvesting and precise winemaking suited to Belgium’s cool climate.
