Description
The 2025 Chardonnay from Eburon Estate Winery is a limited single-vineyard wine from Tongeren, in the heart of Belgium’s Haspengouw region. Produced from just 950 bottles, it combines the mineral character of silex soils with carefully integrated French oak, ceramic-egg maturation and a refined, unfiltered finish. Its origins in Tongeren—Belgium’s oldest city—add a distinctive historical dimension to this contemporary Belgian Chardonnay.
Tasting Notes
Bright and elegant in appearance, this Chardonnay opens with expressive aromas of ripe pineapple, mango and pear, complemented by delicate floral notes. Subtle hints of vanilla and toast emerge from the nine months of maturation in lightly toasted French barriques, while the mineral character of the silex-rich soils adds freshness and precision.
On the palate, the wine is full-bodied and creamy, yet finely balanced by lively acidity and a distinctive mineral thread. Well-integrated oak supports the ripe fruit rather than overpowering it, leading to a long, polished and elegant finish. Its balance, structure and concentration suggest that it should develop gracefully over the coming years, although it is already highly approachable.
Production
The Chardonnay comes from Eburon Estate Winery’s own 1.5-hectare vineyards in Tongeren, planted on distinctive silex soils composed of clay, limestone and silica. The estate has 2,223 Chardonnay vines, planted in 2015 and 2022, and the 2025 crop was hand-harvested on 27 September following a relatively dry growing season. After gentle pressing, the must was fermented in temperature-controlled stainless-steel tanks (30%), new lightly toasted French barriques from Tonnellerie François Frères in Burgundy (60%) and a ceramic egg (10%). The wine underwent malolactic fermentation and matured for nine months on its fine lees, before being blended and bottled unfiltered to preserve its texture and aromatic depth.
Food & Serving
Serve chilled at approximately 10–12°C. This versatile Chardonnay pairs beautifully with salads, grilled or pan-fried fish, creamy risotto, pasta, poultry, veal and refined vegetarian dishes. It also complements mildly aged hard and soft cheeses. Decanting is not essential, but a short period of aeration in a carafe can help reveal the wine’s layered fruit, mineral character and subtle oak nuances, particularly when enjoyed in its youth.
