Description
The 2025 Auxerrois from Eburon Estate Winery is a rare single-vineyard white wine from Tongeren, in the heart of Belgium’s Haspengouw wine region. Produced from just 600 bottles, it combines the variety’s generous fruit and moderate acidity with mineral character from flint-rich soils and the depth gained through French oak maturation. It offers a refined expression of Belgium’s increasingly distinguished modern wine culture.
Tasting Notes
Bright and elegant in appearance, this Auxerrois opens with aromas of ripe pear, yellow citrus and succulent yellow fruit, complemented by delicate floral notes. Subtle vanilla tones from the lightly toasted French oak add complexity without masking the wine’s fresh, varietal character.
On the palate, it is rounded, juicy and pleasantly creamy, with moderate acidity providing balance. Malolactic fermentation and nine months on fine lees contribute a supple texture, while the mineral influence of the flint-rich terroir and a gentle spicy oak note carry through to a long, polished finish. It is approachable now, with the structure and balance to develop further over the next few years.
Production
The wine comes from Eburon Estate Winery’s 1.5 hectares of vineyards in Tongeren, planted with 644 Auxerrois vines in 2015. The characteristic soils combine clay, limestone and silica-rich flint, lending the wine its distinctive mineral elegance. Following gentle pressing, the must was clarified overnight in stainless steel before temperature-controlled fermentation. The wine was then transferred to lightly toasted French oak barrels from Tonnellerie François Frères in Burgundy, where it completed alcoholic and malolactic fermentation and matured for nine months on fine lees. It was bottled unfiltered, preserving its depth and textural character. The grapes were harvested on 20 September 2025, after a growing season that delivered an excellent balance between ripeness and acidity.
Food & Serving
Serve lightly chilled at around 10–12°C. Its creamy texture and balanced freshness make it a versatile partner for sushi, Asian-inspired dishes, creamy pasta, butterfish, roasted pike-perch, cod and light poultry. It also works well with mild soft cheeses or as an elegant aperitif. Decanting is not essential, but a short period of aeration in the glass—or 15–20 minutes in a small decanter—can help reveal its fruit, floral nuances and integrated oak.
