Tasting Notes
In the glass, it shows a clear, luminous ruby-red hue. The bouquet is layered and expressive, with red cherry, raspberry, wild strawberry and cranberry lifted by rose petal, spice, tea leaf and subtle herbal notes; with air, hints of undergrowth, orange peel, graphite and minerality emerge. The palate is silky and finely etched, delivering cool, pure fruit wrapped around vibrant acidity and fine-grained tannins. It feels elegant rather than powerful, yet the wine has notable depth and length, finishing with a salty, complex, almost Burgundian finesse. This is a Pinot Noir that can be enjoyed now for its precision, but it should gain further nuance and complexity with time in bottle.

Production
The fruit comes from Central Otago’s continental climate, where warm days and cool nights help preserve freshness while allowing full phenolic ripeness. Burn Cottage works biodynamically with a strong emphasis on expressing terroir, and the grapes are hand-harvested and carefully sorted before fermentation with native yeasts and minimal intervention. The wine is matured in French oak barrels with a moderate proportion of new oak, supporting structure and texture without overshadowing the purity of the fruit.

Food & Serving
An excellent match for duck, lamb, veal and mushroom-based dishes, as well as game birds, truffle pasta, grilled salmon and aged soft cheeses. Serve slightly chilled at around 14–16°C. Decanting is not essential, but a short decant or a little time in the glass can help the wine open up and reveal its full aromatic complexity.
