Tasting Notes
The wine opens with a luminous golden hue. Its expressive nose reveals yellow apple, pear, quince and ripe stone fruit, complemented by chamomile, alpine herbs, honey and a subtle flinty minerality. With air, more nuanced aromas of beeswax, almonds and saline notes emerge. On the palate, it is powerful yet precise, balancing lively acidity with a creamy, finely textured feel. Mineral tension carries the wine through to a long, elegant and distinctly salty finish. The 2020 vintage offers an appealing combination of freshness, aromatic concentration and structure, making the wine enjoyable now while allowing it to gain further complexity with age.

Production
The vines grow around Fontanasanta in Trentino on limestone- and dolomite-rich soils shaped by the Alpine climate, with warm days and cool nights. Grapes are harvested exclusively by hand and carefully selected before spontaneous fermentation with indigenous yeasts. The wine is then matured on its fine lees in traditional acacia casks, a gentle process that builds texture and complexity without masking the site’s freshness or mineral character.

Food & Serving
Serve at approximately 10–12°C. This expressive white is an excellent match for lobster, turbot, poultry and veal, as well as mushroom dishes, aged cheeses and refined vegetarian cuisine. Decanting is not essential, but 20–30 minutes in a decanter or a generous Burgundy-style glass can help reveal its layered aromas and mineral depth.
