Don Maximiano Founder’s Reserve is Viña Errázuriz’s flagship wine and a benchmark for premium Chilean Cabernet Sauvignon. The 2007 vintage comes from the historic Aconcagua Valley estate founded by Don Maximiano Errázuriz in 1870, combining the valley’s warm continental climate with cooling Pacific influences. A Bordeaux-inspired blend with a Chilean identity, it offers impressive concentration, structure and age-worthy complexity.

Tasting Notes
Deep and dark in colour, the wine shows the intensity expected from a mature, concentrated Aconcagua red. Its layered bouquet opens with blackcurrant, blackberry and blueberry, followed by graphite, violet, cedar and toasted spice. With time in the glass, more developed notes of truffle, tobacco, dark chocolate, cinnamon and clove emerge. On the palate, the wine balances power with refinement. Ripe, firm tannins provide structure, while lively acidity maintains freshness through the dense dark-fruit core. The finish is long, savoury and spicy, with the bottle’s maturity likely adding nuances of leather, dried herbs and forest floor. The 2007 vintage is now entering a rewarding mature phase and is best enjoyed in the near term, although well-stored bottles may continue to develop for several years.

Production
The wine originates in Viña Errázuriz’s historic Aconcagua Valley vineyards, where stony alluvial soils composed of sand, clay and gravel encourage concentration, structure and a distinct mineral character. The 2007 blend comprises 82% Cabernet Sauvignon, 6% Petit Verdot, 6% Cabernet Franc and 6% Syrah. It was matured for 20 months in new French oak barrels, adding depth, toasted spice and a firm structural frame to the ripe fruit. The wine has an alcohol level of 14.5%.

Food & Serving
Serve at 16–18°C with beef tenderloin, braised beef cheeks, rack of lamb or richly flavoured game dishes. It also pairs beautifully with duck breast, mushroom ragout, truffle dishes and mature hard cheeses. As a mature wine, stand the bottle upright for several hours before opening and pour carefully. Decant gently only if the wine seems closed after opening, as prolonged aeration may diminish its more delicate tertiary aromas.
