From one of Mosel’s most cherished names, the 2023 Willi Schaefer Wehlener Sonnenuhr Riesling Kabinett is a benchmark expression of this legendary steep-slope vineyard. Sourced from a tiny 0.24-hectare parcel on the prime, bridge-side section of the cru, it delivers intensity, precision, and effortless charm at just 8% alcohol. This is Kabinett in its purest, most classical form: filigree, slate-driven, and irresistibly drinkable, yet with the depth and structure to age.
Tasting Notes
In the glass, this Riesling shows a pale, crystalline lemon hue with green reflections, hinting at its youthful energy and purity. The nose is remarkably detailed and expressive: perfectly ripe stone fruits—white peach, apricot, and nectarine—interlace with citrus zest, blossom, and a striking, savory minerality reminiscent of wet slate and a sea-breeze salinity.
On the palate, it is both luscious and ultra-refined, weightless yet mouth-filling. Juicy orchard fruits and citrus—lime, Meyer lemon, and peach—are carried on a silky, seamless texture, perfectly balanced by a racy, slate-infused acidity and a subtle, mouthwatering saltiness. The sweetness is moderate and beautifully integrated, finishing refreshingly fresh rather than overtly sweet. While already captivating in its youth, this Kabinett has significant aging potential: expect it to evolve gracefully over 10–20 years, gaining more complexity, honeyed nuances, and a deeper mineral expression.
Production
Wehlener Sonnenuhr is one of the Mosel’s most iconic steep vineyards, composed of weathered, blue Devonian slate that stores heat and imparts the region’s signature smoky, salty minerality. The grapes for this Kabinett come from a minuscule 0.24-hectare plot in a top section by the bridge, where optimal sun exposure and excellent drainage ensure slow, even ripening at low potential alcohol. Willi Schaefer works with painstaking, largely manual harvesting, selecting only perfectly ripe, healthy Riesling grapes at Kabinett ripeness levels. In the cellar, the must is gently pressed and undergoes a cool, slow fermentation—traditionally with ambient yeasts—followed by aging on fine lees in old Mosel Fuder casks. This minimal-intervention approach allows the vineyard character, fruit purity, and delicate balance of natural sweetness and acidity to shine through with crystalline clarity.
Food & Serving
This Kabinett is a superb aperitif—plan on one bottle per person if served before a meal, as it disappears quickly. Its moderate sweetness and electric acidity make it a natural partner for spicy and aromatic cuisines such as Thai, Vietnamese, or lightly spiced Sichuan dishes, as well as sushi, sashimi, ceviche, and delicately prepared shellfish. It also pairs beautifully with fresh goat cheese, soft-ripened cheeses, and light poultry dishes with citrus or herb accents. Serve well-chilled at about 8–10°C (46–50°F) to highlight its precision and lift; brief aeration in the glass is usually sufficient, so full decanting is not necessary, though a short decant can help it unfurl if very young.

Based in Graach, the domaine is best known for its holdings in Graacher Domprobst and the famed Wehlener Sonnenuhr, where it crafts some of the most refined, filigreed, and ageworthy Kabinett, Spätlese, and Auslese in Germany.
