Description
Willi Schaefer’s Graacher Himmelreich Riesling Kabinett 2023 is a benchmark Mosel Riesling from one of the region’s most revered estates. Delicately sweet yet electric with freshness, it delivers the classic Saar-Mosel balance of low alcohol, crystalline fruit and slate-driven minerality. This is a wine that feels effortless in the glass but is the result of generations of meticulous work on some of the Mosel’s finest slopes.
Tasting Notes
In the glass, the 2023 Himmelreich Kabinett shines a pale, crystalline lemon with green reflections, hinting at its youth and vibrancy. The nose is cool and finely etched: flinty and slatey at first, then opening to ripe lime, crisp green apple, white peach and a whisper of blossom and herbal lift. A subtle smokiness and dark slate note underline its origin in the steep Graacher vineyards.
On the palate, it is light-footed yet surprisingly mouthfilling, with juicy stone fruit and citrus woven through a filigree structure of acidity and minerality. Expect a playful interplay of sweetness and tension: a touch of residual sugar carried by zesty lime, lemon peel and a salty, slate-driven edge that keeps everything precise and refreshing. The finish is tingling, gently spritzy, saline and lemony, more caressing than sharp, leaving the mouth watering for the next sip. While already charming in its youth, this Kabinett will gain complexity and nuance over the next 5–15 years, developing notes of honey, herbs and classic Mosel petrol while retaining its vibrant core.
Production
Graacher Himmelreich is a famed steep slate vineyard on the middle Mosel, with south to southwest exposures and well-drained, weathered blue and gray slate soils that lend a distinct cool, flinty character to the wines. Willi Schaefer farms these parcels with great attention to detail, favoring low yields and careful, largely manual work on the slopes to ensure perfectly ripe, healthy Riesling grapes at moderate sugar levels. Harvest is done by hand, often in multiple passes to select optimal fruit, followed by a gentle pressing and a slow, cool fermentation in traditional stainless steel or old Mosel fuders with predominantly natural yeasts. The wine rests on its fine lees before being bottled under screwcap to preserve purity, precision and ageworthiness.
Food & Serving
This Kabinett’s delicate sweetness and vibrant acidity make it an exceptionally versatile food wine. It shines with spicy Asian cuisine (Thai salads, sushi with a bit of heat, lightly spiced curries), dishes featuring shellfish or white fish, fresh goat cheese, grilled poultry, or simple fare like roast chicken with lemon and herbs. It also pairs beautifully with lightly aromatic dishes such as pork with apple or fennel, and can complement fruit-based desserts that aren’t overly sweet. Serve well chilled at around 8–10°C (46–50°F). Decanting is not essential, but opening the bottle 15–20 minutes before serving or pouring into a carafe can help the aromas unfurl, especially in its first few years.
