Willi Schaefer’s 2005 Graacher Domprobst Riesling Spätlese A.P. #8 is a textbook Mosel classic from old, low-yielding vines on one of the region’s most revered slopes. This is a richly concentrated, honeyed Spätlese that still only hints at the botrytis which helped give it depth and power. For collectors and Riesling lovers, it’s a wine that marries delicacy with impressive aging potential.
Tasting Notes
In the glass, the wine shows a luminous golden hue, reflecting both its age and its intensity. The nose is layered and complex: baked apple, dried apple rings and a touch of vanilla mingle with bittersweet herbal and floral tones, plus a whisper of licorice and gentle botrytis spice.
On the palate, this Spätlese is rich, honeyed and compact, trading some youthful juiciness for a deep, concentrated fruit core. Flavors of baked and lightly caramelized apple, acacia honey and dried orchard fruit are wrapped in floral nuances and bittersweet herbal essences, with a fine line of sharp spice carrying through the mid-palate. The finish is long, calm and refined, showing vanilla, spice and a slightly candied apple note that lingers. This is very much a “reserve” style Spätlese, with significant extract and density, and is capable of aging gracefully for more than two decades from vintage, developing even greater complexity over time.
Production
Graacher Domprobst is one of the Mosel’s steep, slate-rich vineyards, famed for its ability to produce deeply flavored yet finely etched Rieslings. The old vines here, with naturally low yields and small-berried clusters, deliver exceptional concentration. In 2005, some of the grapes were partially shriveled by noble rot (botrytis), adding richness and complexity without dominating the wine. The fruit is typically hand-harvested in multiple passes to capture optimal ripeness, then gently pressed. Fermentation takes place with careful temperature control—often in traditional stainless steel or neutral large fuder casks—to preserve purity of fruit, with fermentation stopped to retain natural sweetness and achieve the classic Spätlese balance between sugar and acidity.
Food & Serving
This mature Mosel Spätlese is an excellent match for dishes that echo its sweet-savoury tension: think glazed pork belly, duck with apple or orange, roast poultry with herb stuffing, or delicately spiced Asian cuisine (especially dishes with ginger, lemongrass or light chili heat). It also pairs beautifully with blue cheeses, foie gras, or fruit-based desserts like apple tart or baked pears. Serve lightly chilled, around 9–11°C (48–52°F), to highlight its aromatics without muting its complexity. If the bottle has been well cellared, a gentle decant of 15–20 minutes can help the wine open up, but extended aeration is not necessary.
