Production
Sourced from vineyards on the northern slopes of Mount Etna in the renowned Rampante area, this wine is based predominantly on Carricante, complemented by traditional local white varieties. The vines grow on ancient volcanic soils rich in ash, basalt and minerals, at higher altitudes where warm Sicilian days are tempered by cool nights, preserving acidity and aromatic intensity. Grapes are typically harvested by hand to ensure careful selection of bunches in the steep, terraced vineyards. In the cellar, the fruit is gently pressed and fermented at controlled temperatures in stainless steel to highlight purity, freshness and terroir expression, with a period on fine lees to add texture and complexity without masking the wine’s vibrant, mineral-driven character.

Wiegner Etna Bianco Rampante 2022 is a natural partner for seafood—think grilled prawns, seared scallops, oysters, octopus or simply prepared white fish with lemon and herbs. It also works beautifully with sushi, crudo, vegetable-based pasta dishes, light risotti, goat cheese and fresh young cheeses, as well as Sicilian specialties featuring citrus, capers and herbs. Serve well-chilled but not icy, ideally around 8–10°C (46–50°F), to let the aromatics open up.
