Named after grower Katharina Wechsler, who sells the grapes to winemaker Nick, this bottling embodies the collaborative spirit at the heart of the Wengerter Und project. It offers a more generous and textural side of German Silvaner, while still retaining the grape’s trademark freshness and precision.
Tasting Notes
In the glass, Clos Catherine 2023 shows a pale straw to light lemon hue with a subtle green tint, hinting at its youthful energy. The nose is bright and inviting, with notes of lime zest, fresh lemon, green apple and white flowers, layered with a gentle creamy undertone and a faint herbal edge.
On the palate, the wine is taut yet surprisingly supple, with high acidity that feels integrated rather than sharp. Citrus flavors of lime and lemon are front and center, supported by a quiet, rounded creaminess that gives the wine a lovely sense of weight and balance. The finish is clean, mineral-driven and lightly saline, making each sip feel both refreshing and moreish. Clos Catherine sits in Baden, where slightly warmer conditions than in many other German regions give Silvaner a bit more charm and generosity. The 60-year-old vines dig deep into the local soils, naturally limiting yields and concentrating flavor, while expressing the vineyard’s minerality and subtle spice. Grapes are carefully hand-harvested from this small clos to preserve purity and ensure only the best fruit reaches the cellar. In keeping with the artisanal spirit of the Wengerter Und project, the vinification focuses on gentle handling: slow pressing, cool fermentation and a period of maturation on the lees to develop that fine creaminess and textural depth without overshadowing the grape’s natural freshness.
Food & Serving
This Silvaner is a versatile partner at the table, shining with delicate yet flavorful dishes such as freshwater fish, ceviche, sushi, grilled asparagus, seasonal salads, young goat’s cheese and light poultry in lemon or herb sauces. It also pairs beautifully with German-inspired fare like white sausages, potato salads and mild soft cheeses. Serve well-chilled but not icy, ideally around 8–10°C (46–50°F), to allow both the citrus brightness and the creamy texture to emerge. Decanting isn’t essential, but a few minutes in the glass will help the wine open up and reveal more of its floral and mineral complexity.

Rather than owning vast estates, the project draws fruit from carefully chosen parcels like Clos Catherine, sourced from respected growers such as Katharina Wechsler. This partnership-based approach allows Wengerter Und to highlight distinctive sites and old vines in Baden and beyond, while keeping production small, attentive and hands-on. Though relatively young as a label, the project is quickly earning a reputation among wine lovers for pure, expressive bottlings that honor both place and people.
