Weingut Ziereisen Jaspis Nägelin Chardonnay 2021 is a striking, terroir-driven white from Baden that shows just how serious German Chardonnay can be. Sourced from the prized Nägelin parcel and bottled under Ziereisen’s top “Jaspis” label, this is a wine crafted in a resolutely artisan, Burgundian-inspired style. Low yields, meticulous work in the vineyard, and patient aging in the cellar give a Chardonnay of real depth, tension and ageworthiness, placing it among the most exciting cool-climate examples in Germany.

Tasting Notes
In the glass, the 2021 Jaspis Nägelin Chardonnay shows a pale to medium lemon-gold hue with brilliant clarity and slow, fine tears that hint at concentration. The nose unfolds in layers: ripe citrus (lemon zest, yuzu) and cool orchard fruit (green apple, pear) mingle with white flowers, wet stone, and a finely judged touch of hazelnut, fresh brioche, and subtle smoke from élevage in quality oak. With air, more complexity emerges—chamomile, lemon curd and a delicate saline note. On the palate, this is precise and tightly knit yet already remarkably expressive. A vibrant acid line runs through a core of citrus and stone fruit—think Meyer lemon, crunchy pear and a hint of golden apple—wrapped in a creamy, finely textured mid-palate. The oak is beautifully integrated, offering hints of toasted almond, vanilla pod and spice without ever dominating the fruit. The finish is long, saline and chalky, leaving impressions of lemon peel, crushed rock and a gentle, mouthwatering bitterness. Still youthful in 2021, this wine has excellent aging potential: expect it to develop more nutty, honeyed and brioche notes over 8–12 years, and likely longer in good cellaring conditions.

Production
The Jaspis Nägelin Chardonnay comes from selected plots in Baden’s Markgräflerland, an area influenced by the warmth of the Rhine Rift Valley yet moderated by elevation and cool evening breezes. The soils here are rich in limestone and loess, providing superb drainage and imparting a distinct mineral spine and tension to the wine. Vines are farmed by hand with low yields, and grapes are picked selectively, often in several passes, to ensure perfect ripeness with vibrant acidity. Ziereisen works with a minimally interventionist philosophy: spontaneous fermentation with native yeasts, extended lees contact, and aging in predominantly used barriques and larger oak barrels to build texture and complexity without overt oak imprint. The wine is typically bottled with minimal fining and filtration, preserving purity, structure and a strong sense of place.

Food & Serving
This refined Chardonnay is a versatile gastronomic partner, especially well suited to elegant, subtly rich dishes. Try it with butter-poached or grilled turbot, scallops, or roasted cod, as well as fine poultry such as roast chicken with herbs, guinea fowl, or veal in cream-based sauces. It also matches beautifully with mushroom dishes, truffled pasta, and creamy risottos, and can stand up to aged hard cheeses or mild, bloomy-rind cheeses. For optimum enjoyment, serve at 10–12°C (50–54°F). Young bottles will benefit from 30–60 minutes in a decanter to let the aromatics open and the oak integrate further; older bottles should be handled more gently, with a brief, careful decant mainly to remove any sediment.

Weingut Ziereisen is a small, quality-focused estate based in Efringen-Kirchen in Baden’s Markgräflerland, not far from the borders of France and Switzerland. Over the past decades, Hanspeter and Edeltraud Ziereisen have gained a reputation as some of Germany’s most individualistic and terroir-driven producers, championing low yields, handwork in the vineyards, and a purist, low-intervention approach in the cellar. While initially known for outstanding Spätburgunder (Pinot Noir), the estate has increasingly been recognized for its world-class Chardonnays, which draw inspiration from Burgundy yet remain firmly rooted in the limestone-rich soils and cool climate of Baden. The top “Jaspis” bottlings, including Nägelin, have garnered significant critical praise and helped position Ziereisen as a benchmark producer for serious, ageworthy wines in the region.
