Tasting Notes
In the glass, it shows a pale golden color with a fine, persistent bead. The nose is clean and lifted, offering citrus, green apple, and white flowers, layered with subtle brioche and toasted almond notes from aging on the lees. The palate is crisp, dry, and well-balanced, with lively acidity, a creamy mousse, and a precise mineral finish. The Extra Brut dosage keeps the profile especially pure and focused, making it both elegant and refreshing. While it is ready to enjoy now for its freshness and energy, it should also develop additional complexity over the next few years.

Production
This Crémant is made from 60% Spätburgunder (Pinot Noir) and 40% Chardonnay sourced from chalk-rich vineyards around Heitersheim in Markgräflerland. The area’s warm days and cool nights are ideal for sparkling wine production, helping preserve acidity while allowing full aromatic ripeness. Following the traditional method, the wine undergoes a second fermentation in bottle and then spends 12–18 months on the lees, building texture, depth, and classic pastry-like nuances. The low dosage of the Extra Brut style emphasizes purity, precision, and a distinctly mineral expression.

Food & Serving
A versatile food wine, this Crémant pairs beautifully with oysters, sushi, fried seafood, light poultry dishes, goat’s cheese, or canapés. It is best served well chilled at 6–8°C, and decanting is not recommended—simply open and enjoy its freshness and fine mousse.

Weingut Zähringer is a family estate in Baden with roots dating back to 1844, located in Heitersheim at the edge of the Black Forest. Now led by the sixth generation, Fabian Zähringer, the winery is widely respected for its elegant, terroir-focused wines and has been an early pioneer of organic viticulture in Germany, converting in 1987 and becoming Demeter-certified biodynamic in 2010. The estate is especially known for its refined Spätburgunder and Chardonnay, which often show a Burgundian style of precision, minerality, and finesse.
