Description
Weingut Thörle’s Probstey Spätburgunder 2022 is a striking Pinot Noir from one of Saulheim’s most historic and sought-after vineyards. Combining impressive concentration with remarkable finesse, it shows the kind of depth and elegance that has drawn comparisons to great Burgundy. The Propstey site has been prized since the 13th century, when monks first recognized its potential for exceptional wine.
Tasting Notes
In the glass, it offers a deep, vivid profile of dark ripe fruit, with aromas of blackberry, boysenberry, black cherry, juicy plum, and wild strawberry. These fruit notes are layered with hints of undergrowth and smoke, adding complexity and a sense of place.
The palate is powerful yet finely sculpted, with super-fine tannins, excellent freshness, and a polished, elegant texture. It already drinks beautifully on release, but has the structure and balance to develop further in bottle over the coming years.
Production
The Propstey vineyard is one of Saulheim’s most prominent sites, with a long history dating back to the 13th century. Its south-east-facing slopes, combined with a high proportion of sand and limestone, create wines with both intensity and freshness. The wine was aged for 18 months in French barriques, 40% of them new, to add depth and refinement without overshadowing the fruit.
Food & Serving
Serve this Spätburgunder at around 14°C in large Burgundy glasses to allow the aromatics to open fully. It pairs beautifully with duck, roast guinea fowl, grilled salmon, mushroom dishes, veal, and more refined game preparations. Decanting is optional, but a short decant can help the wine show its full aromatic range when opened young.

Weingut Thörle is a family-owned estate in Saulheim, Rheinhessen, run by the Thörle brothers, who have helped bring new attention to the region’s limestone-driven wines. The estate is especially respected for producing Pinot Noir and Riesling with precision, purity, and strong sense of terroir.
