Tasting Notes
In the glass, this Blanc de Noirs pours a pale straw to very light onion-skin hue, with a fine, persistent mousse that hints at careful, traditional-method aging. The nose is lifted and precise: think crunchy red apple and pear skin, underripe stone fruit, and lemon zest, layered with brioche crumbs, roasted hazelnut, and a distinct chalky, wet-stone character from the calcareous soils. On the palate, the wine is razor-dry and taut, with Brut Nature precision and a firm, Pinot Noir–driven backbone. Red-fruited nuances (white cherry, faint raspberry) mingle with citrus peel, green almond, and a saline, mineral edge that runs through the long, linear finish. The acidity is bright but well-integrated, kept in check by fine, creamy bubbles and subtle lees richness. This 2019 vintage has the structure to continue developing complexity over the next 5–7 years, gaining additional toast, nut, and brioche notes while retaining its mineral core.

Production
The Calcaire series from Weingut Rings is rooted in the limestone-rich soils of the northern Pfalz, where cooler nights and chalky subsoils give Pinot Noir both tension and aromatic lift. Spätburgunder grapes for this Blanc de Noirs are typically hand-harvested at carefully judged ripeness to preserve acidity and finesse, then gently pressed as whole clusters to extract only the palest juice with minimal color. Fermentation likely takes place with temperature control in stainless steel and/or neutral oak, followed by extended maturation on the lees in bottle using the traditional method (méthode traditionnelle) to build texture and complexity. With no dosage added at disgorgement, the Brut Nature style leaves the pure expression of site, grape, and vintage completely exposed.

Food & Serving
This is an excellent sparkling wine for refined, mineral-driven food pairings: think oysters, sashimi, ceviche, and simply grilled white fish, as well as tartare of sea bass or scallops. It also works beautifully with poultry (roast chicken, turkey), veal schnitzel, or lightly smoked charcuterie, and can cut through richer dishes like creamy risotto or goat cheese tart thanks to its brisk acidity. Serve well-chilled at around 8–10°C. Decanting is generally not necessary for this style of sparkling wine, but opening the bottle a few minutes before serving and pouring into proper flutes or white-wine glasses will allow the aromatics and fine mousse to show at their best.
