The estate relies on careful, selective harvesting—often by hand—to ensure only healthy, aromatic fruit is used. In the cellar, the grapes are gently pressed and vinified with a light touch to preserve primary fruit and natural freshness, before undergoing dealcoholisation using a quality-focused method that minimizes aroma loss. Beet and other natural components are then harmoniously integrated to rebuild complexity and texture, resulting in an alcohol-free beverage that remains true to the estate’s biodynamic and minimal-intervention ethos.
